A Look at the History of the Chocolate Tempering Machine

When lightweight chocolate tempering machines were yet to be invented, chocolate enthusiasts could temper their chocolates only with the manual methods of tempering called tabliering and seeding. Chocolate was melted in double boilers or the microwave, and temperatures were monitored via regularly-regulated thermometers.

These manual methods were very difficult and beginners were always unsure of the results of their tempering efforts. The only tempering machines available then took up much space and worked only with hundreds of pounds of chocolate at a time, so they were mainly used by big chocolate manufacturers.

When Skip Snyder, a computer specialist from Poughkeepsie, invented the tabletop tempering machine, these hobbyists and homemakers welcome this new development, particularly as it assured them of having ideally tempered chocolate candies all the time.

Snyder’s main aim was to develop the temperature control capability of his new invention because temperatures ruled the tempering process. If temperatures varied, the production of type V crystals is obstructed and chocolates don’t become crisp, creamy, and glossy. It is the fatty acids of the cocoa butter that crystallize into six different crystal formations at six particular temperatures. The other crystals can be controlled only by maintaining accurately the specific temperature that stimulates the proliferation of the type V crystals.

Snyder took a few months developing his gadget but in 1996, his Sinsation Chocolate Maker was put on sale as a “kitchen appliance”. Initially, the Sinsation was traded by a company called Chandre LLC where Snyder was Chairman. Indrotronix International, an infotech outfit, ventured $1 million in Chandre LLC to underwrite the production and marketing of the product. Chandre chose the mail order route in selling the tempering machine while advertisements were limited to culinary and chocolate print publications.

In 2000, ChocoVision took over the sales of the Sinsation, integrating it into their Revolation array of products and renaming it as the “New Sinsation”. Indrotronix still appeared hold a stake in this new undertaking.

Initially the New Sinsation was sold by ChocoVision online, especially via eBay. Later ChocoVision expanded their marketing campaign to include trade shows and industry expos, including a major sponsorship in the 2006 World and National Pastry Competitions.

The Revolation has become available in other countries also, being marketed internationally through retailers and other distribution channels. Most professional chocolatiers and a few restaurants and coffee shops have the tempering machine in their kitchens as well.

The sleek and comfortable tan chairs and subtle ornaments have a calming affect and allows you to feel like you are having a quiet meal at home, even though you are in the presence with other people.

Overall, Takumi is a marvelous Japanese restaurant. From their delicious menu offerings, to the many different choices of Saki, this Melbourne Japanese restaurant is number one on my book.

Turkey Gravy Secrets Revealed

To make the best tasting turkey gravy you need three things; well-seasoned fat, flour, and a good rich broth. For each cup of finished gravy you will need one tablespoon of fat, one tablespoon of flour and 1 cup of broth.

Start by making up some rich turkey broth. You can use the turkey neck, heart, gizzard or other parts usually found packed inside the turkey cavity. Add some minced onion, diced celery and 1/2 teaspoon salt in enough water to cover, simmer until vegetables are tender. Dice the turkey liver, add to the broth and simmer for about 15 minutes.

You can use the turkey bones if you like. The turkey bones yield much more broth, just add more onions and celery to the pan. You will have to carve the turkey ahead of time, which means no whole roasted turkey sitting on the dinner table waiting to be carved by the host or hostess.

Make sure you use the drippings from the roasting pan, as grandpa always said “that’s the goodies”, just after you’ve removed the cooked turkey and roasting rack from the roasting pan. Strain poultry drippings through a sieve into a 4-cup glass measuring cup.

Add 3 tablespoons of corn oil to the bottom of the roasting pan. Stir around to get out the brown bits that have baked on. Add to your turkey drippings. “Wash” the roasting pan out with the turkey broth if it’s made or add water your going to use in the broth if you haven’t made it yet.

The trick is to know how many cups of broth you have and if you have enough fat. Remember you will need one tablespoon of fat, one tablespoon of flour and 1 cup of broth for each cup of finished gravy.

If you are light on broth you can add some canned chicken broth.
If you are light on fat you can add a small amount of corn oil. You can save the rest of your broth for storing and reheating the turkey.

Here are a few more tips to making great tasting gravy:

First take the measured fat and combine with the proper amount of measured flour in a medium saucepan. Make sure you have covered all the flour with fat and blended it well. Place on burner. Slowly bring
the flour and fat mixture to a simmer until it begins to smell slightly salty. It will be bubbly; the color will be a light brown.

Next remove pan from burner; whisk in all the measured liquids.

Finally return the pan to the burner, again, slowly bring this to a simmer.

Remember you already cooked the flour in the fat so all you need to do now is stir this until it thickens up to your liking. You can let it stay sort of thin or let it cook out until it is thicker than your Mashed potatoes. The choice is yours.

Starbucks Coffee Company

Starbucks Coffee Company was founded in 1971 by three businessmen in Seattle, Washington who had a love for coffee and tea. It was important to them that the city of Seattle to have access their coffee.

The Starbucks Coffee Company grew slowly but by 1981 had 4 retail stores and a roasting plant that sold whole bean coffee in Seattle only.

By 1983 the marketing manager had a vision of re-creating the magic and romance behind the Italian coffee bar and wanted to test out the concept of selling espresso by the cup. When Starbucks Coffee opened its 6th store in downtown Seattle, the idea had become a hit. Within 2 months the new store was serving over 700 customers a day and it was selling 3 times more than the whole bean locations.

In 1987, the owners of Starbucks Coffee Company decided to sell their coffee business along with the name to a group of local investors for $3.7 million.

The new investors were told that they would open 125 Starbucks coffee stores in the next five years. Starting from a base of 17 stores in 1987, the company expanded rapidly to Vancouver, Portland and Chicago.

By 1991 Starbucks had expanded into the mail-order catalogue business, licensed airport stores and expanded further into the state of California.

In 1992 the company went public and after the initial public offering, Starbucks continued to grow at a phenomenal pace that no one had ever seen in the coffee world before. By 1997 the number of Starbucks Coffee stores grew tenfold, with locations in the US, Japan and Singapore.

Starbucks initiated several successful product and brand extensions including offering coffee on United Airlines flights. They also began selling premium teas through its Tazo Tea Company and offering people the option to purchase starbucks coffee online to enjoy at home.

They began distributing whole bean and ground coffee to supermarkets through an agreement with Kraft Foods. They also produced premium coffee ice cream with Dreyers. Starbucks even sold CDs in its retail stores.

Starbucks began turning its name into a household word not through advertising but through word of mouth. In fiscal 2004, Starbucks opened a record 1,344 stores worldwide. The once small regional roaster, Starbucks Coffee Company, now has more than 9,000 locations in 34 countries serving over 20 million customers a week.
